Ingredients
  

Salad Base
  • 2 cups mixed greens such as romaine and spinach
  • 1 cup cabbage shredded
  • 1 cup carrots shredded
  • 1 cup cucumber sliced
  • 1 cup red bell pepper sliced
Chicken
  • 2 cups grilled chicken breast sliced
Dressing
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon ginger grated
  • 1 clove garlic minced
  • 1 tablespoon sesame seeds for garnish

Method
 

Prepare the Chicken
  1. Grill the chicken breasts over medium heat until fully cooked, about 6-7 minutes per side. Let rest and slice.
Make the Dressing
  1. In a mixing bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic until well combined.
Assemble the Salad
  1. In a large bowl, combine mixed greens, cabbage, carrots, cucumber, and red bell pepper. Add the sliced chicken on top.
  2. Drizzle the dressing over the salad and toss to combine. Garnish with sesame seeds.
