Ingredients
  

Pancake Batter
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk or non-dairy alternative
  • 1 large egg
  • 1 tbsp melted butter plus extra for cooking
  • 1 medium ripe banana mashed
Serving
  • 1/4 cup maple syrup for dipping

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, melted butter, and mashed banana. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Cook the Pancakes
  1. Heat a non-stick skillet over medium heat and add a little butter.
  2. Pour small amounts of batter onto the skillet to form dippers (about 2-3 inches in diameter).
  3. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  4. Repeat until all batter is used, adding more butter to the skillet as needed.
Serve
  1. Serve the pancake dippers warm with maple syrup for dipping.
