  • 2 tablespoons maple syrup or honey for non-vegan option
  • 1 teaspoon vanilla extract
Berry Layer
  • 1 cup mixed berries strawberries, blueberries, raspberries
Toppings
  • 2 tablespoons coconut flakes optional
  • 2 tablespoons nuts chopped almonds or walnuts, optional

Method
 

Prepare Chia Pudding
  1. In a mixing bowl, whisk together almond milk, chia seeds, maple syrup, and vanilla extract until well combined.
  2. Let the mixture sit for about 5 minutes, then whisk again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 3 hours or overnight until it thickens.
Assemble Pudding Cups
  1. Once the chia pudding has thickened, layer it in serving cups with mixed berries.
  2. Repeat layers until cups are filled, finishing with a layer of berries on top.
  3. Top with coconut flakes and nuts if desired.
