Prepare the Berry Swirl
- In a mixing bowl, combine the mixed berries, honey, and lemon juice. Mash gently with a fork to create a chunky sauce.
Assemble Ice Cream Bombs
- Scoop softened vanilla ice cream into a muffin tin, filling each cup halfway.
- Add a spoonful of the berry swirl on top of the ice cream in each cup.
- Top with more vanilla ice cream until the cups are full, smoothing the tops with a spatula.
- Cover the muffin tin with plastic wrap and freeze for at least 2 hours, or until solid.
Coat with Chocolate
- Melt dark chocolate chips and coconut oil together until smooth.
- Remove ice cream bombs from the muffin tin and dip each one in the melted chocolate, allowing excess to drip off.
- Place coated ice cream bombs on a parchment-lined tray and return to the freezer for 30 minutes to set the chocolate.
Serve
- Once the chocolate is set, serve the ice cream bombs immediately or store them in an airtight container in the freezer.
