Berry-Swirled Ice Cream Bombs

Ingredients
  

Ice Cream Base
  • 2 cups vanilla ice cream softened
Berry Swirl
  • 1 cup mixed berries fresh or frozen
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon lemon juice
Chocolate Coating
  • 1 cup dark chocolate chips melted
  • 1 tablespoon coconut oil for smoothness

Method
 

Prepare the Berry Swirl
  1. In a mixing bowl, combine the mixed berries, honey, and lemon juice. Mash gently with a fork to create a chunky sauce.
Assemble Ice Cream Bombs
  1. Scoop softened vanilla ice cream into a muffin tin, filling each cup halfway.
  2. Add a spoonful of the berry swirl on top of the ice cream in each cup.
  3. Top with more vanilla ice cream until the cups are full, smoothing the tops with a spatula.
  4. Cover the muffin tin with plastic wrap and freeze for at least 2 hours, or until solid.
Coat with Chocolate
  1. Melt dark chocolate chips and coconut oil together until smooth.
  2. Remove ice cream bombs from the muffin tin and dip each one in the melted chocolate, allowing excess to drip off.
  3. Place coated ice cream bombs on a parchment-lined tray and return to the freezer for 30 minutes to set the chocolate.
Serve
  1. Once the chocolate is set, serve the ice cream bombs immediately or store them in an airtight container in the freezer.
