  • 4 cups blackberries fresh or frozen

  • 2 tablespoons lemon juice freshly squeezed
  • 2 tablespoons cornstarch for thickening
Topping
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 cup butter melted
  • 1 teaspoon vanilla extract

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine blackberries, sugar, lemon juice, and cornstarch. Stir gently to coat the berries.
Make the Topping
  1. In another bowl, whisk together flour, sugar, and baking powder. Add milk, melted butter, and vanilla extract. Mix until just combined.
Assemble and Bake
  1. Pour the blackberry mixture into a greased baking dish. Spoon the topping over the berries evenly. Bake for 40-45 minutes or until the topping is golden brown.
