Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup blueberries fresh or frozen

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture into the bottom of a greased 9x9 inch baking pan. Bake for 10 minutes, then remove from oven and set aside.
Make the filling
  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Add sugar and vanilla extract, and mix until well combined. Add eggs one at a time, mixing well after each addition.
  3. Gently fold in the blueberries.
Bake the bars
  1. Pour the filling over the prepared crust in the baking pan. Bake for 30 minutes or until the center is set.
  2. Allow to cool at room temperature, then refrigerate for at least 2 hours before cutting into bars.
