Ingredients
  

Pasta
  • 12 oz Pasta (e.g., penne or fusilli) Use whole wheat for a healthier option.
Bruschetta Topping
  • 4 medium Tomatoes Diced
  • 1 cup Fresh basil Chopped
  • 3 cloves Garlic Minced
  • 1/4 cup Olive oil Extra virgin
  • 1 tsp Balsamic vinegar Optional for added flavor
Cheese
  • 1/2 cup Parmesan cheese Grated

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and set aside.
Prepare the Bruschetta Topping
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add the diced tomatoes, chopped basil, salt, and pepper. Cook for about 5 minutes until the tomatoes soften.
  3. Stir in the balsamic vinegar, if using, and remove from heat.
Combine and Serve
  1. In a large bowl, combine the cooked pasta with the bruschetta topping. Toss well to combine.
  2. Serve warm, topped with grated Parmesan cheese.
