  • 1 cup sushi rice
  • 1.25 cups water
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • 0.5 tsp salt
  • 0.5 ripe avocado, sliced
  • 0.5 cup imitation crab meat, shredded
  • 0.5 English cucumber, julienned
  • 2 nori sheets
  • low-sodium soy sauce for serving

Method
 

  1. Rinse sushi rice under cold water until clear. Cook with water according to package instructions until tender.
  2. Season cooked rice by mixing rice vinegar, sugar, and salt; fold gently into the rice.
  3. Prepare fillings: slice avocado and julienne cucumber; shred crab meat if using real crab.
  4. Lay a nori sheet on a bamboo mat, spread half the sushi rice evenly on top, leaving an inch at the top edge.
  5. Place avocado, cucumber, and crab in the center of the rice-covered nori.
  6. Roll tightly using the mat as leverage; slice into bite-sized pieces with a wet knife.
