Ingredients
  

Cauliflower
  • 1 head Cauliflower Cut into florets
  • 2 tablespoons Olive Oil For roasting
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Toppings
  • 1 cup Cucumber Diced
  • 1 cup Tomato Diced
  • 1/2 cup Red Onion Thinly sliced
  • 1 cup Tzatziki Sauce For serving
  • 4 pieces Pita Bread For serving

Method
 

Roast Cauliflower
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine cauliflower florets with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  3. Spread the cauliflower mixture on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
Assemble Gyros
  1. Warm the pita bread in the oven for a few minutes.
  2. Layer roasted cauliflower, cucumber, tomato, and red onion on each pita.
  3. Drizzle with tzatziki sauce and serve immediately.
