Ingredients
  

Base Ingredients
  • 1 cup dried cherries chopped
  • 1 cup rolled oats old-fashioned
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup for vegan option
  • 1/4 cup chopped nuts walnuts or pecans
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
Coating (optional)
  • 1/4 cup shredded coconut unsweetened

Method
 

Prepare the Mixture
  1. In a mixing bowl, combine the dried cherries, rolled oats, almond butter, honey, chopped nuts, vanilla extract, and salt.
  2. Mix well until all ingredients are fully combined.
Form the Balls
  1. Using your hands, take small portions of the mixture and roll them into balls about 1 inch in diameter.
  2. If desired, roll the balls in shredded coconut to coat.
Chill and Serve
  1. Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  2. Serve chilled or at room temperature.
