Ingredients
  

Filling
  • 4 cups fresh cherries, pitted
  • 1 cup granulated sugar adjust based on sweetness of cherries
  • 2 tablespoons cornstarch for thickening
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
Crisp Topping
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
Serving
  • 4 scoops vanilla ice cream

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the pitted cherries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Toss to coat the cherries evenly.
Make the Crisp Topping
  1. In another bowl, mix together the rolled oats, flour, brown sugar, melted butter, cinnamon, and salt until crumbly.
Assemble and Bake
  1. Pour the cherry mixture into a baking dish. Sprinkle the crisp topping evenly over the cherries. Bake in the preheated oven for 30 minutes or until the topping is golden brown and the cherries are bubbling.
Serve
  1. Remove from the oven and let cool slightly. Serve warm with a scoop of vanilla ice cream on top.
