Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
Filling
  • 2 cups fresh or frozen cherries pitted and halved
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, butter, sugar, and salt. Mix until crumbly.
  2. Press the mixture into the bottom of a greased baking dish to form the crust.
  3. Bake the crust for 15 minutes or until lightly golden.
Make the filling
  1. In a separate bowl, combine cherries, sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
  2. Pour the cherry mixture over the baked crust, spreading it evenly.
Bake the bars
  1. Return the baking dish to the oven and bake for an additional 15-20 minutes until the filling is bubbly.
  2. Remove from the oven and let cool before cutting into bars.
