Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup fresh cherries pitted and halved

Method
 

Prepare the Dough
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Add the cold butter to the flour mixture and use a pastry cutter to blend until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream and vanilla extract until just combined.
  5. Gently fold in the cherries until evenly distributed.
Shape and Bake
  1. Turn the dough out onto a floured surface and pat it into a 1-inch thick circle.
  2. Cut the dough into wedges or use a round cutter to shape scones.
  3. Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
  4. Remove from the oven and let cool slightly before serving.
