Ingredients
  

Pasta and Chicken
  • 8 oz penne pasta or any pasta of choice
  • 2 cups grilled chicken breast sliced
Salad Ingredients
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup Parmesan cheese shredded
  • 1/4 cup croutons optional
Dressing
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1 tbsp lemon juice freshly squeezed

Method
 

Prepare the Pasta
  1. Cook the penne pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Grill the Chicken
  1. Season the chicken breasts with salt and pepper. Grill over medium heat for about 6-7 minutes on each side or until fully cooked. Let rest before slicing.
Combine Ingredients
  1. In a large mixing bowl, combine the cooled pasta, chopped romaine, cherry tomatoes, sliced grilled chicken, and Parmesan cheese.
Add Dressing
  1. In a small bowl, whisk together the Caesar dressing and lemon juice. Pour over the pasta salad and toss to combine.
Serve
  1. Top with croutons if desired and serve immediately.
