Ingredients
  

Ice Cream Base
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
Strawberry Mixture
  • 1 cup fresh strawberries hulled and sliced
  • 2 tablespoons granulated sugar for macerating
Chocolate Coating
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil or vegetable oil

Method
 

Prepare the Strawberry Mixture
  1. In a bowl, combine sliced strawberries with 2 tablespoons of sugar. Let sit for 10 minutes to macerate.
Make the Ice Cream Base
  1. In a mixing bowl, whisk together heavy cream, whole milk, sugar, vanilla extract, and salt until the sugar is dissolved.
Churn the Ice Cream
  1. Pour the ice cream base into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Add Strawberries
  1. Gently fold in the macerated strawberries into the churned ice cream.
Freeze the Ice Cream
  1. Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours until firm.
Prepare the Chocolate Coating
  1. In a saucepan, melt dark chocolate chips and coconut oil over low heat until smooth. Remove from heat.
Serve
  1. Scoop the ice cream into bowls and drizzle with melted chocolate. Serve immediately.

Notes
