Ingredients
  

Pudding
  • 200 g dates pitted and chopped
  • 250 ml boiling water
  • 100 g unsalted butter softened
  • 150 g brown sugar
  • 2 large eggs
  • 200 g self-raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
Toffee Sauce
  • 100 g brown sugar
  • 100 g unsalted butter
  • 200 ml double cream

Method
 

Prepare the Pudding
  1. Preheat the oven to 180°C (350°F). Grease a baking dish.
  2. In a bowl, combine the chopped dates and boiling water. Let it sit for 10 minutes.
  3. In another bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Fold in the flour and baking powder, then add the date mixture.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 30-35 minutes until a skewer comes out clean.
Prepare the Toffee Sauce
  1. In a saucepan, combine the brown sugar, butter, and double cream.
  2. Cook over medium heat, stirring until the sugar has dissolved and the sauce is smooth.
  3. Bring to a gentle boil and simmer for 2-3 minutes.
Serve
  1. Cut the pudding into squares and serve warm, drizzled with the toffee sauce.
