Ingredients
  

Brownie Base
  • 1 cup cottage cheese blended until smooth
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup for sweetness
  • 1/4 cup coconut oil melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Toppings
  • 1/4 cup chocolate chips optional
  • 1/4 cup fresh berries for garnish
  • 2 tablespoons whipped cream optional

Method
 

Prepare the Brownie Base
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the blended cottage cheese, cocoa powder, honey or maple syrup, melted coconut oil, eggs, vanilla extract, baking powder, and salt. Mix until smooth.
  3. Pour the brownie mixture into a greased baking dish.
  4. Sprinkle chocolate chips on top if desired.
  5. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
Serve
  1. Allow the brownies to cool for a few minutes before cutting into bowls.
  2. Top with fresh berries and whipped cream if desired.
