Ingredients
  

Brownie Base
  • 1 cup cottage cheese blended until smooth
  • 1/2 cup cocoa powder unsweetened
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil melted
  • 2 large eggs
  • 1/2 cup whole wheat flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Toppings
  • 1/4 cup chocolate chips optional
  • 1/4 cup fresh berries for garnish
  • 2 tablespoons Greek yogurt for serving

Method
 

Prepare the Brownie Base
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the blended cottage cheese, cocoa powder, honey, melted coconut oil, and eggs. Whisk until smooth.
  3. Add the whole wheat flour, vanilla extract, baking powder, and salt. Stir until just combined.
  4. Pour the brownie batter into a greased baking dish and sprinkle chocolate chips on top if desired.
  5. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
Serve
  1. Allow the brownies to cool slightly before cutting into bowls.
  2. Top each bowl with fresh berries and a dollop of Greek yogurt.
  3. Serve warm and enjoy!
