Ingredients
  

Pasta and Vegetables
  • 8 oz pasta (rotini or penne) cooked and drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1 cup black beans drained and rinsed
  • 1/2 cup red onion finely chopped
  • 1/2 cup corn canned or frozen
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
Mix the Ingredients
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, black beans, red onion, and corn.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, garlic powder, chili powder, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss to combine. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

Notes

This salad can be made a day in advance and stored in the refrigerator. Add avocado just before serving to prevent browning.
