Ingredients

Soup Base
  • 3.5 lbs Russet potatoes, peeled and cut into 1/2-inch cubes
  • 1 medium yellow onion, finely diced
  • 4 cloves fresh garlic, minced
  • 4 cups low-sodium chicken bone broth
  • 1 tsp kosher salt
  • 0.5 tsp coarsely ground black pepper
  • 0.5 tsp onion powder
Velvety Dairy Blend
  • 8 oz cream cheese, softened and cubed
  • 1.5 cups sharp yellow cheddar cheese, freshly shredded
  • 0.5 cup heavy whipping cream
  • 0.5 cup sour cream
Loaded Steakhouse Toppings
  • 8 slices halal beef bacon (or turkey bacon), cooked crisp and crumbled
  • 0.5 cup additional shredded sharp cheddar for garnish
  • 0.33 cup sour cream, for serving dollops
  • 0.25 cup fresh green chives, finely snipped

Method

Instructions
  1. Place peeled cubed potatoes, diced onions, and minced garlic into a 6-quart slow cooker. Pour in chicken broth, salt, black pepper, and onion powder.
  2. Cover and cook on LOW for 7 to 8 hours (or HIGH for 3.5 to 4 hours) until potatoes are completely fork-tender.
  3. Use a handheld wire potato masher directly in the slow cooker to crush 1/2 to 2/3 of the potatoes, leaving some chunky bites for texture.
  4. Add cubed softened cream cheese, shredded cheddar, heavy cream, and sour cream. Stir with a wooden spoon until melted and velvety smooth. Cover and let sit on LOW for 10 minutes.
  5. Ladle hot soup into bowls and crown with extra cheddar, a dollop of sour cream, crispy beef bacon crumbles, and snipped chives. Serve warm.

Notes

Using high-starch Russet potatoes and mashing gently in the cooker creates an authentic thick steakhouse body without artificial thickeners. Room-temperature cream cheese melts seamlessly into the broth.
