Ingredients
  

Vegetables
  • 1 medium cabbage chopped
  • 2 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
Dairy
  • 1 cup heavy cream
  • 1 cup milk
Seasoning
  • 1 teaspoon thyme dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prepare the Vegetables
  1. In a large pot, heat a little oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the diced potatoes and chopped cabbage to the pot, stirring to combine.
Cook the Soup
  1. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for about 20 minutes, or until the vegetables are tender.
Blend and Add Cream
  1. Using a blender, carefully blend the soup until smooth. Return to the pot.
  2. Stir in the heavy cream and milk, and season with thyme, salt, and pepper. Heat through without boiling.
Serve
  1. Ladle the soup into bowls and enjoy hot.
