Ingredients
  

Vegetables
  • 1 medium cabbage chopped
  • 2 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
Dairy
  • 1 cup heavy cream
  • 1 cup milk
Seasonings
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon thyme dried

Method
 

Prepare the Vegetables
  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the chopped cabbage and diced potatoes, and stir for a few minutes.
Cook the Soup
  1. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes until the vegetables are tender.
Blend and Add Cream
  1. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  2. Stir in the heavy cream and milk, and season with salt, pepper, and thyme.
Serve
  1. Serve hot, garnished with fresh herbs if desired.
