Ingredients

Pasta & Aromatics
  • 1 lb (16 oz) refrigerated four-cheese tortellini
  • 1/2 cup sun-dried tomatoes packed in olive oil, drained and sliced (reserve 2 tbsp oil)
  • 4 cloves garlic, finely minced
  • 1 tbsp unsalted butter
  • 1 tbsp tomato paste
  • 3 cups fresh baby spinach, packed
Garlic Parmesan Cream Sauce
  • 1 cup heavy whipping cream
  • 3/4 cup low-sodium vegetable broth or chicken bone broth
  • 1/2 cup Parmigiano-Reggiano cheese, freshly grated
  • 1/2 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes (optional for mild warmth)
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper
Cheese Topping & Garnish
  • 1.5 cups whole-milk mozzarella cheese, freshly shredded
  • 2 tbsp fresh Italian basil leaves, torn or chiffonade

Method

Build the Cream Sauce
  1. In a large oven-safe skillet or Dutch oven, heat 2 tbsp reserved sun-dried tomato oil and 1 tbsp butter over medium heat. Sauté minced garlic and tomato paste for 1-2 minutes until fragrant.
  2. Whisk in vegetable broth, heavy cream, Italian seasoning, red pepper flakes, salt, and pepper. Simmer for 3 minutes, then stir in grated parmesan until melted and silky.
Fold Pasta, Bake & Broil
  1. Add the refrigerated tortellini, sliced sun-dried tomatoes, and baby spinach. Fold gently for 2-3 minutes until spinach wilts into the hot sauce.
  2. Preheat oven to 400°F (200°C). Top skillet evenly with shredded mozzarella. Bake for 15 minutes until bubbling, then broil for 2-3 minutes until golden and blistered. Garnish with fresh basil.
