  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1.5 cups Japanese panko breadcrumbs
  • 3/4 cup Parmesan cheese, finely grated
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried Italian seasoning
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly cracked black pepper
  • 1 tbsp olive oil spray (for misting)
Creamy Garlic Herb Dip
  • 1/2 cup sour cream (or whole milk Greek yogurt)
  • 1/4 cup plain Greek yogurt
  • 1 clove garlic, finely grated or pressed
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely snipped
  • 1 tsp fresh lemon juice
  • 1/4 tsp sea salt and black pepper to taste

Method

Prep, Dredge & Coat
  1. Preheat oven to 425°F (220°C). Set an oven-safe wire cooling rack inside a large rimmed baking sheet and lightly spray with olive oil. Cut zucchini into uniform 1/2-inch batons and pat thoroughly dry with paper towels.
  2. Set up 3 shallow bowls: Bowl 1 with flour, salt, and pepper; Bowl 2 with beaten eggs; Bowl 3 with panko, grated parmesan, garlic powder, smoked paprika, and Italian seasoning.
  3. Dredge each zucchini spear in flour, dip in beaten egg, and press firmly into the panko-parmesan mixture until generously coated. Arrange in a single layer on the wire rack.
Bake & Make Dip
  1. Lightly mist the zucchini fries with olive oil spray. Bake at 425°F (220°C) for 18-22 minutes until golden brown and super crispy.
  2. While fries bake, whisk sour cream, Greek yogurt, grated garlic, dill, chives, lemon juice, salt, and pepper in a small bowl until smooth. Serve hot fries with cool dip.
