Ingredients
  

Eggplant Preparation
  • 2 medium Eggplants Sliced into 1/4 inch rounds
  • 1 teaspoon Salt For sweating the eggplant
Breading Mixture
  • 1 cup All-Purpose Flour
  • 2 large Eggs Beaten
  • 1 cup Breadcrumbs Panko preferred for extra crispiness
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Black Pepper
Frying
  • 2 cups Vegetable Oil For frying

Method
 

Prepare the Eggplant
  1. Slice the eggplants into 1/4 inch rounds and sprinkle with salt. Let them sit for 15 minutes to draw out moisture.
Set Up Breading Station
  1. In three separate bowls, place flour, beaten eggs, and breadcrumbs mixed with garlic powder, paprika, and black pepper.
Bread the Eggplant
  1. Rinse the salted eggplant slices under cold water and pat dry with paper towels. Dip each slice first in flour, then in egg, and finally in breadcrumbs, ensuring they are well coated.
Fry the Eggplant
  1. Heat vegetable oil in a frying pan over medium-high heat. Fry the breaded eggplant slices in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Serve
  1. Serve hot as an appetizer or side dish, optionally with a dipping sauce.
