Instructions
- In a large bowl, whisk together flour, cornstarch, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
- Separate the eggs. In a medium bowl, whisk egg yolks, pumpkin puree, buttermilk, melted butter, and vanilla until smooth and combined.
- In a clean bowl, beat the egg whites with a hand mixer or whisk until soft peaks form (about 2 minutes).
- Pour the pumpkin mixture into the dry flour blend; stir gently until just combined. Fold in the whipped egg whites with a spatula until no white streaks remain.
- Preheat Belgian waffle maker thoroughly; brush grids lightly with butter or oil. Ladle 1/2 to 2/3 cup batter into the center, close lid, and bake for 4 to 5 minutes until steam stops and waffle is deep golden and crisp.
- Rest cooked waffles on a wire rack (never stack). Serve hot topped with whipped cinnamon honey butter, toasted pecans, and warm pure maple syrup.

Notes
The addition of cornstarch combined with folding in whipped egg whites creates a dramatically crispy waffle exterior with an airy, cloud-like interior. Rest on a wire rack to preserve the crunch!
