Ingredients
  

  • 2 ripe avocados diced
  • 1 large English cucumber chopped
  • 1 cup cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 2 tbsp lemon juice freshly squeezed
  • 2 tbsp olive oil extra virgin
  • Salt to taste
  • Pepper to taste

Method
 

  1. Wash all vegetables thoroughly and chop the cucumber into bite-sized pieces.
  2. Halve the avocados, remove the pit, scoop out the flesh, and cut into chunks.
  3. In a large bowl, combine chopped cucumbers, avocado pieces, halved cherry tomatoes, and sliced red onion. Toss gently.
  4. In a small bowl, whisk together lemon juice and olive oil; season with salt and pepper. Pour over salad mixture and toss gently again.
  5. Chill in the refrigerator for about 15-20 minutes before serving to meld flavors.
