Ingredients
  

  • 4 large bell peppers (red, yellow, or green)
  • 1 lb lean ground turkey or beef
  • 1 cup cooked rice (white or brown)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 medium onion, finely chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 cup shredded cheddar or mozzarella cheese

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cut the tops off the bell peppers and remove seeds. Place them upright in the baking dish.
  3. In a skillet over medium heat, sauté the chopped onion until translucent. Add the ground meat and cook until browned.
  4. Stir in the cooked rice, diced tomatoes, cumin, and paprika; mix well.
  5. Spoon the filling into each bell pepper and top with shredded cheese.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is golden.
