Method
Prepare the Cake
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the oil, eggs, grated carrots, crushed pineapple, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and mix until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
Make the Frosting
- In a mixing bowl, beat the softened cream cheese and butter together until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.
Assemble the Cake
- Once the cakes are completely cooled, place one layer on a serving plate and spread a layer of frosting on top.
- Place the second layer on top and frost the top and sides of the cake.
- Press shredded coconut onto the sides and top of the cake to create the bunny's fur.
- Cut marshmallows in half diagonally to create ears and place them on top of the cake.
- Add the black olive for the nose and candy eyes to complete the bunny face.
