Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream for topping
Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup butter melted
  • 2 tbsp sugar
Decoration
  • 1 cup mini marshmallows for bunny ears
  • 1/2 cup chocolate chips for eyes
  • 1 tbsp pink candy melts for nose

Method
 

Prepare the Crust
  1. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
  2. Line serving cups with cupcake liners and press the crumb mixture into the bottom of each cup.
Make the Cheesecake Filling
  1. In another bowl, beat the softened cream cheese with sugar and vanilla extract until smooth.
  2. Fold in the whipped cream gently until fully incorporated.
Assemble the Cups
  1. Spoon the cheesecake filling over the crust in each cup, smoothing the top.
  2. Refrigerate for at least 30 minutes to set.
Decorate
  1. Once set, decorate each cheesecake cup with mini marshmallows for ears, chocolate chips for eyes, and a pink candy melt for the nose.
