Ingredients
  

Cupcake Ingredients
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts optional
  • 1/2 cup raisins optional
Frosting Ingredients
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Method
 

Make the Cupcakes
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the oil and eggs until well combined. Stir in the grated carrots, walnuts, and raisins if using.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
Make the Frosting
  1. In a mixing bowl, beat the softened cream cheese and butter together until smooth.
  2. Gradually add the powdered sugar and vanilla extract, mixing until creamy and smooth.
  3. Once the cupcakes are completely cool, frost them with the cream cheese frosting.
