Eggplant & Tahini Noodle Bowls

Ingredients
  

Noodles
  • 8 oz rice noodles or any preferred noodles
Eggplant
  • 1 large eggplant cut into cubes
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup spinach fresh
Tahini Sauce
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 clove garlic minced
  • 2 tbsp water to thin the sauce
  • 1 tbsp olive oil
  • Salt to taste
Garnish
  • 1/4 cup fresh parsley chopped
  • 2 tbsp sesame seeds

Method
 

Prepare the Eggplant
  1. Preheat the oven to 400°F (200°C). Toss the cubed eggplant with olive oil, salt, and pepper, and spread it on a baking sheet.
  2. Roast the eggplant for 25-30 minutes, or until golden and tender, stirring halfway through.
Cook the Noodles
  1. While the eggplant is roasting, cook the rice noodles according to package instructions. Drain and set aside.
Make the Tahini Sauce
  1. In a mixing bowl, whisk together tahini, lemon juice, minced garlic, and water until smooth. Adjust consistency with more water if needed, and season with salt.
Assemble the Bowls
  1. In serving bowls, layer the cooked noodles, roasted eggplant, cherry tomatoes, cucumber, and spinach.
  2. Drizzle with tahini sauce and garnish with chopped parsley and sesame seeds.
