Ingredients
  

Shrimp
  • 1 pound large shrimp, peeled and deveined Use fresh or thawed
Cajun Marinade
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning Store-bought or homemade
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon lemon juice Freshly squeezed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Vegetables (optional)
  • 1 bell pepper cut into chunks Any color
  • 1 zucchini sliced
  • 1 red onion cut into chunks

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, Cajun seasoning, garlic powder, paprika, lemon juice, salt, and black pepper.
Marinate the Shrimp
  1. Add the shrimp to the marinade and toss to coat. Let it marinate for at least 15 minutes.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated shrimp and optional vegetables onto the skewers.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Grill the skewers for about 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
Serve
  1. Remove from the grill and serve immediately with lemon wedges.
