Father's Day Teriyaki Pineapple Chicken

Ingredients
  

For the Marinade
  • 1/2 cup soy sauce low sodium recommended
  • 1/4 cup brown sugar packed
  • 1/4 cup pineapple juice fresh or canned
  • 2 cloves garlic minced
  • 1 teaspoon ginger freshly grated
  • 1 tablespoon sesame oil
For the Chicken
  • 4 pieces chicken breasts boneless and skinless
  • 1 cup fresh pineapple cut into rings
  • 2 tablespoons green onions sliced for garnish

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together soy sauce, brown sugar, pineapple juice, minced garlic, grated ginger, and sesame oil until well combined.
Marinate the Chicken
  1. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 hours.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C).
Grill the Pineapple
  1. During the last few minutes of grilling the chicken, add the pineapple rings to the grill. Grill for about 2-3 minutes on each side until caramelized.
Serve
  1. Remove the chicken and pineapple from the grill. Serve the chicken topped with grilled pineapple and garnish with sliced green onions.
