  • 4 cups mixed greens such as arugula, spinach, or romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup red onion thinly sliced
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey optional
  • salt to taste salt
  • pepper to taste black pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, feta cheese, mint leaves, and red onion.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill in the refrigerator for 15 minutes before serving.
