Ingredients

Pastry & Filling Ingredients
  • 1 sheet all-butter puff pastry, thawed but chilled
  • 8 oz wheel of brie cheese, cut into 24 cubes (rind left on)
  • 1/2 cup whole berry cranberry sauce
  • 1/4 cup pecans or walnuts, finely chopped
  • 2 tbsp fresh rosemary, minced into tiny needle clusters
  • 2 tbsp pure clover honey, warmed for drizzling

Method

Cut Pastry & Assemble
  1. Preheat oven to 400°F (200°C). Lightly grease a 24-cup mini muffin tin with cooking spray.
  2. Unroll chilled puff pastry on a floured surface, roll slightly to 10x12 inches, and cut into 24 squares. Press each square gently into a muffin cup.
  3. Place one cube of brie in each pastry cup. Top with 1 teaspoon cranberry sauce, chopped pecans, and a tiny sprig of fresh rosemary.
Bake & Honey Glaze
  1. Bake for 15-18 minutes until pastry corners are deeply golden-brown and brie is bubbling. Rest in tin for 5 minutes, drizzle with honey, and serve warm.
