Fresh Blackberry Shortcakes

Ingredients
  

Shortcake
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1/2 cup unsalted butter cold and cubed
  • 1 cup heavy cream plus extra for brushing
Topping
  • 2 cups fresh blackberries
  • 1 cup heavy cream for whipping
  • 2 tbsp powdered sugar for sweetening whipped cream

Method
 

Prepare the Shortcakes
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine flour, baking powder, sugar, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream until just combined.
  5. Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick round.
  6. Cut into rounds and place on a baking sheet. Brush tops with extra cream.
  7. Bake for 12-15 minutes or until golden brown.
Prepare the Topping
  1. In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
  2. Wash and drain the blackberries.
Assemble the Shortcakes
  1. Slice the baked shortcakes in half.
  2. Layer the bottom half with blackberries and a dollop of whipped cream.
  3. Top with the other half of the shortcake and add more blackberries and cream on top.
