Ingredients
  

Shortcake
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1/2 cup unsalted butter cold and cubed
  • 1 cup heavy cream plus extra for brushing
Topping
  • 2 cups fresh blueberries
  • 1 tbsp granulated sugar for macerating blueberries
  • 1 cup heavy cream for whipped cream
  • 2 tbsp powdered sugar for sweetening whipped cream
  • 1 tsp vanilla extract

Method
 

Prepare the Shortcakes
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, whisk together flour, baking powder, sugar, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream until just combined.
  5. Turn the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick round.
  6. Cut into rounds and place on a baking sheet. Brush tops with extra cream.
  7. Bake for 12-15 minutes or until golden brown.
Prepare the Topping
  1. In a bowl, combine blueberries and sugar. Let sit for 10 minutes to macerate.
  2. In another bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
Assemble the Shortcakes
  1. Slice the baked shortcakes in half horizontally.
  2. Spoon some macerated blueberries onto the bottom half, add whipped cream, and top with the other half.
  3. Serve immediately and enjoy!
