Ingredients
  

Tofu and Vegetables
  • 14 oz firm tofu pressed and cubed
  • 2 cups broccoli florets
  • 1 cup carrot sliced
  • 1 cup bell pepper sliced
  • 2 tbsp cornstarch for coating
Sauce
  • 3 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp sesame oil
  • 1 tbsp maple syrup or agave nectar
  • 1 clove garlic minced
  • 1 tbsp ginger grated
Garnish
  • 2 tbsp green onions sliced
  • 1 tbsp sesame seeds

Method
 

Prepare Tofu
  1. Press the tofu for at least 15 minutes to remove excess moisture, then cut into cubes.
  2. Toss the cubed tofu in cornstarch until evenly coated.
Fry Tofu
  1. Heat oil in a frying pan over medium-high heat. Add the tofu cubes and fry until golden brown and crispy, about 5-7 minutes. Remove and set aside.
Cook Vegetables
  1. In the same pan, add broccoli, carrots, and bell pepper. Stir-fry for about 5-7 minutes until tender-crisp.
Make Sauce
  1. In a small bowl, mix together soy sauce, sesame oil, maple syrup, garlic, and ginger.
Combine
  1. Add the fried tofu back to the pan with the vegetables. Pour the sauce over and stir to combine. Cook for an additional 2-3 minutes.
Serve
  1. Serve the tofu and vegetable mixture in bowls, garnished with green onions and sesame seeds.
