Greek Style Souvlaki with Homemade Tzatziki

Ingredients
  

Souvlaki Marinade
  • 1 lb pork shoulder or chicken breast cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 3 cloves garlic minced
  • 1 tablespoon oregano dried
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 small cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon dill fresh or dried
  • 1 teaspoon salt
To Serve
  • 4 pitas pita bread for serving
  • 1 cup mixed greens optional
  • 1 cup tomatoes diced, optional
  • 1 cup red onion sliced, optional

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.
  2. Add the meat cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes.
Make the Tzatziki Sauce
  1. In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, and salt.
  2. Mix well and refrigerate until ready to serve.
Cook the Souvlaki
  1. Preheat the grill to medium-high heat.
  2. Thread the marinated meat onto skewers.
  3. Grill the skewers for about 10-15 minutes, turning occasionally, until the meat is cooked through and has nice grill marks.
Serve
  1. Serve the grilled souvlaki with warm pita bread, tzatziki sauce, and optional toppings like mixed greens, tomatoes, and red onion.
