Ingredients
  

Beef Tenderloin
  • 1 lb Beef Tenderloin Trimmed
  • 2 tbsp Olive Oil For marinating
  • 1 tsp Salt To taste
  • 1 tsp Black Pepper Freshly ground
Cherry Salsa
  • 1 cup Cherries Pitted and chopped
  • 1/4 cup Red Onion Finely chopped
  • 1 tbsp Fresh Cilantro Chopped
  • 1 tbsp Lime Juice Freshly squeezed
  • 1 pinch Salt To taste

Method
 

Prepare the Beef
  1. Preheat the grill to medium-high heat.
  2. Rub the beef tenderloin with olive oil, salt, and black pepper.
  3. Let it marinate for at least 15 minutes.
Grill the Beef
  1. Place the beef tenderloin on the grill and cook for about 8-10 minutes on each side for medium-rare.
  2. Use a meat thermometer to check for an internal temperature of 130°F (54°C).
  3. Remove from grill and let rest for 5 minutes before slicing.
Make the Cherry Salsa
  1. In a mixing bowl, combine the chopped cherries, red onion, cilantro, lime juice, and salt.
  2. Mix well and let sit for 5 minutes to allow flavors to meld.
Serve
  1. Slice the grilled beef tenderloin and serve topped with cherry salsa.
