Ingredients
  

For the Enchiladas
  • 1 lb ground beef preferably lean
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 8 large corn tortillas
  • 1 cup cheddar cheese shredded
For the Red Sauce
  • 1 can red enchilada sauce about 10 oz
  • 1 tsp olive oil
  • 1 tsp cumin
  • 1 tsp garlic powder

Method
 

Prepare the Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
  3. Stir in cumin and chili powder, mixing well. Remove from heat.
Assemble the Enchiladas
  1. Preheat the oven to 350°F (175°C).
  2. Warm the corn tortillas in a dry skillet or microwave to make them pliable.
  3. Spoon a portion of the beef mixture onto each tortilla, sprinkle with cheese, and roll tightly.
  4. Place the rolled tortillas seam-side down in a baking dish.
Prepare the Sauce
  1. In a bowl, combine the red enchilada sauce, olive oil, cumin, and garlic powder.
  2. Pour the sauce evenly over the enchiladas in the baking dish.
  3. Sprinkle remaining cheese on top.
Bake
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, until cheese is bubbly and golden.
Serve
  1. Let cool for a few minutes before serving. Garnish with fresh cilantro if desired.
