A colorful mix of stir-fried vegetables seasoned with soy sauce and sesame oil, inspired by traditional Japanese hibachi cooking.

Ingredients
  

Vegetables
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers mixed colors
  • 1 cup sliced zucchini
  • 1 cup sliced carrots
  • 1 cup sliced mushrooms
  • 2 tablespoons soy sauce low sodium preferred
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
  • 1 tablespoon sesame seeds for garnish

Method
 

Preparation
  1. Wash and chop all vegetables into bite-sized pieces.
  2. In a small bowl, mix soy sauce, sesame oil, garlic, and ginger.
Cooking
  1. Heat a wok over medium-high heat and add a little oil if needed.
  2. Add the broccoli and carrots first, stir-frying for about 2 minutes.
  3. Add the bell peppers, zucchini, and mushrooms, and continue to stir-fry for another 3-4 minutes until tender-crisp.
  4. Pour the soy sauce mixture over the vegetables and toss to coat evenly.
  5. Cook for an additional minute, then remove from heat and sprinkle with sesame seeds before serving.
