Ingredients
  

Pasta and Vegetables
  • 8 oz rotini pasta cooked and cooled
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1 cup black olives sliced
  • 1 cup salami sliced and quartered
  • 1 cup mozzarella balls bocconcini or ciliegine
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • 1 clove garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the cooked rotini pasta, cherry tomatoes, cucumber, bell pepper, black olives, salami, and mozzarella balls.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss gently to combine. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
