Juicy Garlic Herb Butter Roasted Turkey Breast

A foolproof, showstopping roast turkey breast with crispy crackling golden skin, massaged inside and out with garlic rosemary sage compound butter and served with rich pan gravy.

Ingredients
  

Turkey Breast & Pan Aromatics
  • 1 (5-6 lbs) bone-in, skin-on whole turkey breast
  • 1 cup low-sodium chicken or turkey bone broth
  • 2 stalks celery, roughly chopped
  • 2 medium shallots, halved
  • 4 cloves garlic, crushed
Garlic Herb Compound Butter
  • 6 tbsp unsalted butter, softened to room temperature
  • 6 cloves garlic, finely minced
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh sage, finely chopped
  • 1 tbsp fresh thyme leaves, finely chopped
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper

Method
 

Prep & Butter Turkey
  1. Preheat oven to 375°F (190°C). In a roasting pan, add broth, chopped celery, shallots, and crushed garlic. Place a roasting rack inside.
  2. Pat turkey breast completely dry with paper towels. In a bowl, mash softened butter with minced garlic, rosemary, sage, thyme, paprika, salt, and pepper until combined.
  3. Gently loosen the skin over the breast with your fingers. Spread 2/3 of the compound butter under the skin onto the meat. Rub the remaining 1/3 over the outside of the skin.
Roast & Rest
  1. Place turkey breast on the roasting rack skin-side up. Roast for 60-75 minutes until an instant-read thermometer registers 162°F in the thickest part.
  2. Transfer turkey to a cutting board, tent loosely with foil, and rest for 15-20 minutes (temperature will rise to 165°F). Carve across the grain and serve with warm pan juices.
