Ingredients
  

Meat
  • 2 pounds lamb shoulder, cut into cubes You can also use lamb shank.
Vegetables
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 large tomato, chopped
Spices
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Freshly ground.
Liquids
  • 1 can coconut milk Full-fat for creaminess.
  • 1 cup water or broth Adjust for desired consistency.
Herbs
  • 1/4 cup fresh cilantro, chopped For garnish.

Method
 

Cooking the Lamb
  1. In a large pot, heat some oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Stir in the lamb cubes and brown on all sides.
  4. Add the chopped tomato and cook until softened.
Adding Spices and Liquids
  1. Sprinkle in the curry powder, cumin, coriander, turmeric, salt, and black pepper. Stir to coat the lamb evenly.
  2. Pour in the coconut milk and water or broth, stirring to combine.
  3. Bring the mixture to a simmer, then reduce heat to low and cover. Cook for about 1 hour, or until the lamb is tender.
Finishing Touches
  1. Once the lamb is tender, taste and adjust seasoning if necessary.
  2. Serve hot, garnished with fresh cilantro.
