  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
Berries
  • 1 cup mixed berries fresh or frozen

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the wet ingredients: melted butter, eggs, buttermilk, lemon zest, and lemon juice.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the mixed berries.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

For best results, use fresh berries when in season. You can substitute with blueberries, raspberries, or strawberries.
