  • 1 lb large shrimp peeled and deveined

  • 1 cup cherry tomatoes halved
  • 2 cloves garlic minced
Condiments
  • 3 tbsp fresh lemon juice
  • 3 tbsp extra virgin olive oil plus a splash for cooking
  • Salt & pepper to taste

Method
 

Cooking
  1. In a skillet over medium heat, add a splash of olive oil; sauté the shrimp seasoned with salt and pepper for about 3 minutes until pink.
  2. While shrimp cooks, whisk together lemon juice, minced garlic, and remaining olive oil in a bowl.
  3. Slice avocados in half, remove the pit, and cut into bite-sized pieces; halve the cherry tomatoes.
  4. In a large bowl, combine cooked shrimp, avocado, and tomatoes; pour the dressing over and gently toss to combine.
  5. Adjust seasoning as needed and serve immediately.
