Ingredients
  

Base Ingredients
  • 1 cup Lentils Green or brown lentils, rinsed
  • 4 cups Water
  • 4 cups Kale Chopped, stems removed
  • 1 cup Quinoa Rinsed
Vegetables
  • 1 cup Cherry Tomatoes Halved
  • 1 medium Cucumber Diced
  • 1 medium Red Bell Pepper Diced
Dressing
  • 3 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1 teaspoon Garlic Minced
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Black Pepper To taste
Toppings
  • 1/4 cup Feta Cheese Optional, crumbled
  • 1/4 cup Pumpkin Seeds Roasted

Method
 

Prepare the Lentils and Quinoa
  1. In a large pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender. Drain and set aside.
  2. In the same pot, add quinoa and 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and set aside.
Cook the Kale
  1. In a large bowl, massage the chopped kale with a pinch of salt for a few minutes until it softens. Set aside.
Combine Ingredients
  1. In a large mixing bowl, combine the cooked lentils, quinoa, kale, cherry tomatoes, cucumber, and red bell pepper.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper.
Assemble the Power Bowl
  1. Drizzle the dressing over the bowl and toss to combine. Serve topped with feta cheese and pumpkin seeds if desired.
