Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes or any waxy potatoes
Toppings
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1/4 cup green onions, sliced for garnish
  • 1/2 cup sour cream for serving
Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Potatoes
  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  2. Drain the potatoes and let them cool slightly before smashing them with a masher.
Cook in Skillet
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the smashed potatoes to the skillet, season with garlic powder, salt, and pepper, and cook until crispy, about 10 minutes.
Add Toppings
  1. Sprinkle the cheddar cheese and crumbled bacon over the potatoes.
  2. Cover the skillet and cook for an additional 5 minutes, until the cheese is melted.
  3. Garnish with sliced green onions before serving.
Serve
  1. Serve hot with a dollop of sour cream on the side.
